I'm going to lay all of my cards out on the table: I hate to cook, I hate grocery shopping and I've come to dread the time of day when my eldest asks, 'What are we having for dinner?'

I work a lot, so when I come in at the end of the day I'm physically and mentally give out. I consider myself a creative person but when it comes to putting meals together, nothing but tumbleweeds rolls across my brain. When I go grocery shopping, I usually walk out with Little Debbie Swiss Rolls, a candle, tin foil and a bag of chips. Preparation and planning is key for me both in the kitchen and pretty much in every aspect of my life.

One of my oldest and best friends, Shea, sent me a link to a website that offers tips for organization, suggestions for saving money, printable coupons and easy recipes for the busy mom.

Shea made the suggested recipe for Crock Pot Chicken & Dumplings (with a few of her own modifications) and swore they were both delicious and easy to make. Skeptical, I tried the recipe and they were everything she promised.

I prepared all of the ingredients before I left at 6:00 am and asked my husband to take the crock pot out of the fridge and plug it in before he left later that morning.

By 5:00 that evening we were ready to eat. I made the mistake of telling Perry and the boys to go ahead without me so I could finish what ever I was in the middle of doing and they graciously left me some echoes of chicken and a dumpling. What little I had was delicious!!

So, let's get down to business. Here's what you need to know:

PREP: 6 minutes

INGREDIENTS:

Boneless, skinless Chicken Tenderloins

1 can of condensed Cream of Chicken soup

1 can of chicken broth

1 small onion, chopped

Salt and pepper to taste

2 cans of biscuits; quarter each biscuit (added later)

1 1/2 cups of water

Combine ingredients except biscuits and water in crock pot. Cook on LOW for 4 hours. Add biscuits (each quartered into slices) and water and cook on LOW for an additional 2 hours.

TOTAL COOK TIME: 6 Hours

RATING: BONAFIDE (see rating explanation below)

These bad boys were so good and SUPER easy. I was on cloud nine all night knowing I'd successfully fed my family a hearty meal without having to invest a lot of time in the kitchen. If Crock Pot's have motors, then I'm about to burn one up!
