What do you eat when times get tough? Whether you're too bummed to cook a decent meal or you just don't have the cash to make it happen, we all have a go-to struggle meal. 

My fave depression meals include (but are no means limited to): a pint of Ben & Jerry's, a fistful of Advil followed by a caramel frap, milk from the carton, or literally anything I order from Waitr/Crimson2Go because I am too lazy to cook.

I have a soft spot in my heart for the real struggle meals, though...

I grew up POOR. I'm talking free-lunch-poor, go-to-sleep-in-the-winter-under-78-blankets-because-we-can't-afford-the-electric-bill poor, split-a-package-of-ramen-noodles-between-four-kids-poor, straight up POOR poor.

My mom used to make these things we called "Saturday Morning Specials," which I loved (and, tbh, still occasionally crave). She'd take that cheap sliced white bread and put a slice of bargain bologna on it and top it with American cheese before popping the whole thing in the oven for about 15 minutes.

We'd also have random casseroles meant to stretch the budget further. Sometimes my mom would sautee polish sausage and sauerkraut and serve it with Kraft mac & cheese. We were a family of six, so I get how hard it must have been to feed everyone while keeping the water and power on.
