Get Your Breakfast On! – Easy Breakfast Recipe
I'm no sure what to call this so if you have a suggestion, let me know.
I created this masterpiece breakfast dish last Sunday morning. Try it and share if if turned out as good as I expect it too.
The Dish includes:
- 1 big red(new) potatoes,
- 1 cup steamed broccoli, 1/4 cup sliced red and yellow Bell Peppers
- 1/4 cup onions
- 2 eggs
- shredded Velveeta Cheese.
- olive oil
How I laid it out:
Wash and slice the red potato in to circles then slice long ways into strips (like small fries).
Add enough olive oil to cover the bottom of a small skillet and add sliced potatoes, onions and bell peppers. cook on medium- high heat until potatoes are golden brown. Then drain on a paper towel.
Pour off any olive oil and crack eggs in the skillet. Break the yellow of the eggs and stir adding the steamed broccoli. Just as the eggs are getting done add the shredded Velveeta cheese to taste.
Place egg mixture on a plate and top with the potatos, peppers and onions. Sprinkle more cheese over if desired....salt and pepper to taste
(the only thing I think it is missing is fresh sliced tomatoes on the side!)
